Slept 10 hours last night.

Brisket on the WSM at 0700. Doing it all on the smoker for the first time. I've done two before and both times instead of wrapping I vac bagged and sous vide for 24 hours ish.

Pork shoulder was drizzled with honey after the smoke and placed in a covered foil pan. After it hits the temp I want, I will put it back on the smoke to crisp up.

If you do the same with brisket (foil to speed cooking) it'll have a nice, crispy bark... if ya did it right. fog

Buddy is bringing a brisket over today. We're gonna cook that tomorrow. Freshly smoked brisket and leftover pulled pork for da game.

Ground up the brisket trimmings (3lbs - this one had lots of thin edges) and made burgers. I think I need to final grind with a finer plate to get ground beef that sticks together better, these are always so delicate but damn tasty.

Macs, my temps were super low all day so the brisket is still on. Still not getting a nice crust so I took the temp to 265ish and was browsing brisket recipes. Came across the "Goldee's method" so I'm gonna run with it. Still holding 260 pretty steady and the brisket's at 170 but still firm. Probably should've started at 250 instead of 225 but my smoker seems to like 225 and 275 I struggle to hold between there.

Leave unwrapped in the smoker, cook to 195, wrap in foil with beef tallow under the point, then rest at 140f for 12 hours.

Seems interesting and easy enough. Electric smoker in the garage can hold the rest time, I've got a can of wagyu tallow to use up, and it's going to finish pretty late tonight so an overnight rest would be perfect.

Brisket is off at 194 and probe tender with a firm crispy bark.

Wrapped with tallow and put in my indoor electric smoker without smoking wood at 140. I'll remove it around noon tomorrow and see if this method worked for me. Can't imagine it could be bad enough to ruin an $80 chunk of meat but we'll see. Hhopefully if it's bad it's just good and not great.

66/47. Enjoying the cooler weather, which just might call for firing up the jacuzzi!

Anyhow, just hanging with my wife (after shopping at five stores in less than two hours this morning. Gonna watch all the Supe Bowl pregame stuff all day and night. Might jump on the Vherf if anyone else is going to.

Chicago auto show started yesterday. I'm hoping superbowl will cut down on crowds. Really hate going on the weekends.

A nice 6 miler hike in the mountain preserve with my bestest girl and stopped for bagels (everything w/spicy cream cheese) on the way home. Just finished a cigar on the patio and ready to watch the Open for a bit. Got it taped for later this afternoon so I can enjoy another cigar in 76 degrees day and then on to the SB.

Hope it's a close game.

Ha! I grew up on that beach.

I really wanted a warm water destination, but wifey the trave planner is having analysis paralysis with the Caribbean and Florida... So, I think we will give CA one more try. So much for warm water and no homeless people.

Well that didn't work out as I'd hoped. Or maybe it did and it would've been even more crowded. Worst Chicago auto show I've ever gone to. Not very many cars, very few concept cars, and the place wasn't even filled. Oh well. Went to Connies pizza afterward as has been wife and my tradition going back to our first auto show together in 05.

Oh, and the traffic was awful. Counted 5 car crashes on the trip. Hour and a half each way. Should be 40 minutes sometimes an hour if traffic is really heavy.

Brisket got sliced, vac bagged and frozen. Tried a tiny piece but after eating Connies I didn't have room for even that tiny morsel.

Back to work tomorrow.

Outside of actually going to the Detroit Auto Show you're seeing a traveling gimmick. At the Detroit show you will see all of the manufacturers, their ideas for the future and in some cases adaptive driving innovation for handicapped, the casual RV'er, a small dose of military and some cars that are just well...30 years ahead of their time. I've had the pleasure to set up for GM at the show 2 years and it was a pressure cooker. Had the disservice to see the shows outside of Detroit and they pale in comparison. Even in the same year, it was hard to see the differences.
