I'm on my second set of Chicago Cutlery in a block. The chef's knife is sharp and I use it the most, but I bet it ain't Japanese chef knife sharp.

Which one did ya get?

Fujiwara Kanefusa FKM Series Gyuto

It's a beginner knife for sure. I went with the 8.2(210) size. It's on the cheaper side for Japanese steel. Just under $100 depending on the size you pick. I'm already eyeballing the next one I would want but it's based on how it looks and it is around $400 but it's not needed just more of a want.

get a good knife sharpener and it won't matter too much how expensive your knives are as long as the steel is decent... I'm still using an inexpensive set of Rogers made with carbon steel that was a housewarming or wedding gift 40+ years ago...used to sharpen the knives with a whetstone, and got decent results... after a buncha years, started looking for "better knives", but never pulled the trigger...

then, I found the Chefs Choice electric sharpener about 20 years ago..it cost about a tenth of what the set of knives I was considering would have cost...

Ran the Rogers knives through it and they were great...better than using the whetstone...I sharpen the set of knives about 2x a year and they are good to go...

I only use whetstone, have been for a while. Pretty decent at it now. I have used electric sharpeners on my work knives and never liked how they turned out. Not sure if it's something I was doing wrong. The whetstone has always been good to me.

To be fair, that might be because I try to use different angles for the knifes.

I always like the Spyder Sharpmaker, but they have another model designed for kitchen knives that is fantastic, the Spyderco Galley V Premium Sharpener. It's does a great job on both smooth and serrated blades.

Happy Friday fellas.

Picked up 24 hours OT the last two nights. Off three then back for a week.

On the topic of knives, I'm a big fan of my Wustof knives. I sharpen with a set of stones and an angle jig. They're not cheap, but they're tools, buy once cry once.

I have a Wusthof 8" filet knife. Sharpest knife I have, but it's not an all purpose type of instrument, ya know?

Happy Friday morning crew. I have had the same sharpener for about 30 years and it still does the job but I'm not that persnickety about it.

We are off to the Open today with my younger brother and wife.

28 wc 18. Nice start to the day.
Less than stellar afib event last night (bpm range 179 down to 35). Perhaps bourbon later along with cigars should help.
While I’m in the process of making great decisions, think I’ll mix in a couple breakfast sandwiches on my way home from the casino.

Betting the Eagles money line and a couple props for chits and giggles.

The Garbage Golf tournament also kept my attention for a good part of yesterday. Going to scratch that itch again.

When watching 16, it almost didn’t register in my mind.
- the default low roar as they near the tee box.
- the insanity when the ball lands close to the cup.

But my biggest grin was reserved for the outright cascade of boos after a bad shot.

Sure blows up the stereotype of a bunch of stuffed shirts politely clapping, while viewers nod off in front of their tv.

After the British Open and the Masters, this is my new fave.

You really can't get a good feel for the sound on TV. When a hole in one was made at the 16th last year the roar could be heard from a mile away. And the boos are only at the crazy 16th which is a stadium, the rest of the course it would be highly frowned upon.

Syrian/Turkish EQ is looking like one for the record books. That is the kind of thing which will likely level a good chunk of California. Scary stuff.

The one part of the coverage annoying me is when the talk about the Death Toll. The trope is The number of deaths continues to rise.

Surprised by that, are you? We’re you thinking the death toll would start going down? There would need to be some serious Lazaruth stuff to reduce the numbers.

Taxes are filed. $400 return this year woohoo!

HVAC dude is over here replacing my furnace right now. There goes $7k. And that's a wrap for my kitchen remodeling cash savings. Shower door and furnace pretty much wiped it out. Might could still do it with HELOC money but I don't like the high interest rate and it's not super urgent. But I do think if I do it and get those exterior walls insulated the utility bill will drop. It went down after I did the bathroom and this is the last room without insulation.

Over 50 here today - warmest on record for the day for many of the state's towns. Too windy ad wet to get much of anything done outside. Snow is all gone and more warmth coming until late in this month.

Next time we go back to Japan, I wanna get a couple of good knives. One to cut sashimi and the other as a good all-arounder. A former customer of mine is *really* into Japanese knives so before we go, gonna get some input from him.

Tried to just stay up all day after working last night. Made it till about 230 and fell asleep on the couch. Woke up at 4 when the boy was running around and was super disoriented. Took a minute to figure out what day and time it was.

Probably going to go to bed at 8p. I have a brisket rubbed and wrapped in the fridge. Initial plan was to do it today but then I went to work last night and the furnace happened. Go to bed at 8 I'll be up around 4 and can get it started early.

Really struggling to pick a spot for a summer beach vacation with the little kids this year. We have typically done an airbnb in Southern California (Newport, Mission beaches, OC, etc) but the homeless explosion has just made it more and more miserable to walk around.

Wife wants to get away from the airbnb (wants to be waited on a bit) but I think it's the best option with our young kids.

Looking for a place with a nice beach, walkable to food, coffee, desserts, and yeah no homeless camps or schizophrenic's having shopping cart wars outside our front door at 5am.

Caribbean is probably too rainy in June. Mexico is out due to safety concerns.

Any suggestions?
