Just cooked a sheetpan meal w/ feta stuffed italian sausage, potatoes, green bell peppers, red bell peppers, and carrots, with a drizzle of garlic olive oil over the top. I'll take my chef certification now

I make my own sauce. Well it’s from Sheldon Simeon.

1 cup unsweetened pineapple juice

1 cup chicken stock

1/2 cup soy sauce

1/2 cup packed light brown sugar

1/3 cup ketchup

2 teaspoons grated peeled fresh ginger (from 1 [2-inch] piece)

1 1/2 teaspoons finely chopped garlic

I'm getting down to the bottom of my big humidor. A former coworker gave me a humidor and cigar sampler a few years ago after I took care of her husband. Bunch of names I'd not heard of and some general/altadis stuff so I've barely touched the 10 pack.

Pulled out a Flores y Rodriguez Connecticut Valley reserve. Low expectations but so far its been fantastic.

I always preferred the 3 on 4 off / 4 on 3 off work weeks. Only better schedule is 4 10's. But with that you only get 80 hours instead of 84.

I ate a lotta Huli-Huli Chicken (…the actual brand…) when I was growing up. Back in the day it was one of the prime fundraising companies so on any given weekend you could drive around and smell it being cooked. Iffin’ you wanted some, all you had to do was look for the smoke, drive to the spot and pick up a few for lunch or dinner. Kinda, sorta remember it as low as $2.50 per half chicken but then over the years the price went up to, iirc, $7.50. At any rate, whenever a school, club, non-profit, etc. would hold a Huli-Huli Chicken fundraiser, HHC would bring in all their cooking gear and the people in the fundraising organization would be the ones to turn the racks of chicken over, take them off the skewers, cleave them in half, bag and distribute. Freshly cooked HHC was soooo frankin’ delicious! I can figuratively still smell and taste it.

With that being said, as close as anyone’s recipe can get (…even the one sold in a bottle…), unless the chicken is cooked over kiawe charcoal, the taste may be similar but can’t ever replicate the old-time experience. Ahh, the good ol’ days….

there is occasionally a group of locals that make huli huli chicken in a roadside tent along Highway 11 on da Big Island, a few miles south of Keauhou Bay...I usually get a chicken or two when they're there...mouth watering when fresh off the grill.

I grill mine on a Weber Traveler gas grill to get good char on it. Can’t replicate island charcoal so I don’t even try! Some grilled pineapple, rice, and macaroni salad for sides. Always a big hit.

The pandemic shut down a lot of those roadside companies, at least here on Oahu. Such a shame ‘cause like you said, fresh-off-the-grill kiawe grilled chicken is incredibly delicious. Should have thought of this earlier but this Summer it would have been great to take the granddaughters on a road trip to look for some huli-huli chicken, go to a beach spot and have lunch.

Kiawe is a species of mesquite so mebbe the non-Hawaii stuff might be close?

You can get Kiawe from this place but dunno if the shipping cost would be too prohibitive.

I can darn well try to ship it. Then I can compare it to our Texas mesquite. I’ll cook them on my regular Weber. We were in Oahu for a week in the fall of 2019 and saw tons of Huli stands.

Haoles shipping charcoal….ridiculous

A dribble of rain and some high winds overnight. Morning walk was in 50% rh .. bah.

Gonna be 88/108 today and going down to 100 for few days over the weekend due to a tropical depression coming up from the Baja.
