Turkey tiddies hit 135 on the smoker. Vac sealed em and dumped in a sous vide bath at 140 for 2 hours.

Gonna sear em with a torch, fridge em to firm up and then slice thin. Hopefully it's everything I'm hoping for.

It’s not like I eat at fancy-ish restaurants a lot but I can’t remember seeing rabbit on the menu or as a special anywhere. Fo’ sure iffin’ it was offered, I would definitely order it.

From what I understand, rabbits are good to raise for harvesting. They reproduce quickly so you won't run out of food.

I do so enjoy the fact my neighbor has chickens. They don't eat them, but we get fresh eggs a lot. Wife and I both eat a lot of eggs and only buy them half the time because they always give us some. 6 chickens... was 7 but a possum got 1.

They are great.. corned beef briskets, rib roast, carver ham…. So great.

I make jerky quite often, and deli meats half as often. It would definitely improve my quality of life.

I don't wanna screw around with a consumer grade slicer tho. I want a fixit special commercial grade unit from behind a deli counter. Keep checking marketplace and Craigslist but any time I see one for cheap it's gone fast

Hobart makes a nice clean slice on cigars as well.

For sure we will smoke something nice to commemorate, although not at the actual event.

Honestly though, we could smoke Gurkhas and the time spent would be invaluable. There are no promises of "the next get together" so I value every minute I get with people important to me. The cigar is just an excuse.

Another day in da gym... followed by a $300 trip to Costco... and $100 of that bill was just beef and chicken. $80 was dog food/treats. d'oh!

Hash Bash Day in Ann Arbor Michigan (U. of Michigan).

Orlando will be 85F/77F with zero chance of rain.

Had radio frequency ablation trial today (just some local anesthesia) Just a little bit of local anesthesia- at the nerve root. It numbs my neck/back pain for like 4 hours, which means the trial was successful! Next time, the doc will ablate (burn out) the nerve roots where the pain is being generated, and it is expected to last as long as 18 months. Looking forward to it.

Nothing planned today except putting new street numbers on my mailbox...

you should prolly keep the same numbers, otherwise the USPS might get confused.
